How to handle sticky pizza doughUpdated a year ago
We use a high hydration recipe which some people can think of it as being sticky. When handling sticky dough there are a few simple rules to follow:
- Do not cover it in excess flour as this will affect the gluten and cause the dough ball to rip or shrink.
- Instead, lightly roll the dough ball in flour or flour preparation dust
- Press out as normal
