Just add water!
Get Ready: Check your mixer to see how much flour it can handle and any special settings it needs.
Measure Water: Use a scale to measure 185g of boiling water and 370g of cold water.
Mix Water and Yeast: Pour both waters into one jug, add the yeast, and stir. Wait 10-15 minutes until it gets frothy.
Mix Dough: Put the flour mix into the mixer bowl, add the yeast water, and mix on low for 3 minutes.
Rest Dough: Let the dough sit uncovered for 20 minutes.
Mix Again: Mix on medium for 8 minutes, scraping the sides if needed.
Cover Dough: Cover the bowl tightly with plastic wrap.
Choose Fermentation:
- Option 1: Leave in a cool place (below 5ºC) for 24 hours for better taste.
- Option 2: Leave in a warm place (around 20ºC) for 8 hours for faster results.
Shape Dough: Divide the dough into 6 balls (250g each for 12” pizza). Adjust size if needed (200g for 9” pizza, 125g for thin crust).
Proof Dough: Put the balls in covered containers and let them sit for 1 hour before making your pizza base.
