Why is my dough springing back when I stretch it?Updated a year ago

If you find your dough ball is springing back when you are pressing it out, this is usually due to the dough ball not having sufficient time to relax and get up to room temperature.  If the room in which it is relaxing is too cold, the gluten will not be able to relax and you will find it springs back.
