Why is my pizza soggy in the middle after cooking?Updated a year ago

There are several reasons for this:

  1. The pizza stone on which the pizza is placed is most likely not hot enough.  The stone must be super hot before cooking. Your oven may say the oven temperature however, this does not give a true indication of the temperature of the pizza stone, so it's worth investing in an infrared laser thermometer gun. If you are cooking more than one pizza, ensure the stone has time to warm up again in between bakes.  You should be looking at a temperature of between 400 and 450°C on an outdoor oven or 230 - 250ºC on a kitchen oven.
  2. Your pizza base is too thick.  Our 250g dough balls should be pressed out to approximately 12 inches.
  3. There are too many toppings on the pizza.

But like we said at the top, the most likely reason is that the stone or steel is not hot enough.
